HISTORY

A 100% French Sake, brewed from 95% polished Camargue Brio Rice, organic French wine yeast, and Ile-de-France hard water.The hardness of this Parisian water, precisely, is about 216 mg / L (against 50 mg / L in Japan), which gives our cuvées a great richness in minerals and a unique taste complexity.Although this characteristic allows us to obtain a completely new and remarkable result, it complicates the manufacture by making in particular the control of fermentation much more difficult, which therefore requires extreme precision.
