In keeping with the theme of Corsica, Corsican Myrtle and Pomelo were added during the fermentation of the sake to create harmony. It has a botanical aroma like artisanal gin and a refreshing acidity derived from citrus fruits.

For this summer month, the Wakaze Lab went to one of the sunniest terroirs in France, the Corsican Maquis. We have selected the Myrtle, the emblematic linen plant of the Corsican ecosystem, which we have combined with Pomelo for more freshness. The berries and leaves of Myrtle as well as the bark of Pomelo are infused in the moromi (fermenting mixture) while the pulpit of Pomelo is directly mixed in the moromi. These two techniques allow a perfect balance between texture and flavours for the summer. Kampai!
